Discover this recipe of beef bourguignon easy to prepare in casserole. I tried many recipes of beef bourguignon, but this one is very simple, and for me remains the best.
Ingredients / for 6 people
- 1.5 kg beef for bourguignon
- 200 g diced bacon
- 60 g of butter
- 10 small onions
- 2 carrots
- 2 cloves garlic
- 60 g flour (4 tablespoon)
- 2 large glasses of red wine (50 cl) Burgundy (obviously)
- 2 large glasses of meat broth (2 cubes of beef broth for 50 cl = 1/2 liter of water)
- 250 g mushrooms
- 1 bouquet garni

Total time: 3:50 minutes
1- Cut the beef into cubes 3 to 4 cm long. Peel the onions without skinning them. Peel and cut the carrots into thin slices (2mm minimum). Peel the garlic and remove the germ.
2- In a large casserole, melt the butter. Add the onions whole and bacon. Brown, stirring constantly. When golden, remove with a skimmer, and set aside.
3- In the same casserole, sauté the pieces of meat over high heat. Add the carrots and cook for another 5 minutes.
4- When the meat is golden, sprinkle with flour (60g) and leave to brown while stirring constantly.
5- Pour the broth (which you have prepared by melting the 2 cubes of meat broth in 50 cl of boiling water). Scrape the juices well. Put the bacon and onions back in the pan. Pour the red wine. Season with salt and pepper and add the bouquet garni and crushed garlic cloves. Bring to a boil. Cover and simmer gently for 3 hours (small broth).
At the end of this time, add the minced mushrooms, and cook another half an hour. Remove the bouquet garni and pour into a dish Serve with pasta (tagliatelle for example), or steamed potatoes (the sauce must be tied, but not thick, otherwise add a little water).
