Tofu scrambled to the Mexican

  • INGREDIENTS

-450 g (1 lb.) tofu semi-firm or firm

-1 small onion, chopped

-1 clove of garlic, chopped

-5 mL (1 teaspoon) chopped jalapeno pepper

-15 ml (1 tablespoon) vegetable oil

-2.5 ml (1/2 teaspoon) ground cumin

-1 mL (1/4 teaspoon) smoked paprika

-1 mL (1/4 teaspoon) turmeric

-1 tomato, diced

-2 green onions, chopped

-Coriander leaves, to taste

-Sour cream, to taste

-Tabasco sauce, to taste

  • PREPARATION

Above a bowl, with your hands, crumble the tofu.
In a large nonstick skillet over medium heat, soften the onion, garlic and chilli in the oil for 5 minutes. Add tofu and spices. Salt and pepper. Cook, stirring until the liquid is evaporated, about 8 minutes.
Garnish with tomato, green onions, coriander, sour cream and Tabasco sauce. Accompany with quesadillas, if desired.
