Ingredients for 4 persons
- 250 g of mascarpone
- 3 eggs
- 100 g of sugar
- 20 cl of strong coffee
- 2 tablespoons Amaretto (or marsala or rum)
- Twenty biscuits spoons
- bitter cocoa powder or chocolate chips

1- Whisk 3 egg yolks with the icing sugar until the mixture whitens and becomes foamy. Then add the mascarpone and mix until the result is homogeneous.
2- Beat 3 whites in firm snow with a pinch of salt, then mix with mascarpone cream. Attention, to keep a mixture well sparkling and light, the whites must not be “broken”. Gently mix up and down with a silicone spatula, rotating your container a quarter of a turn each time.
3- Prepare a large cup of strong coffee, preferably an espresso. Add the Amaretto, an Italian almond alcohol that will incredibly scent your dessert, then mix. Cut the end of the biscuits so that they adhere perfectly to the wall of your dish. Use the tips to complete the holes in the center of your tiramisu.
Spread a layer of mascarpone cream at the bottom of the dish, then place a layer of biscuits lightly soaked in Amaretto coffee. Repeat the process and finish with a layer of mascarpone cream that you sprinkle with bitter cocoa powder or chocolate chips. Keep cool for at least 3 hours.
