Ratatouille of the Cookeo

A desire for vegetables, filled with sun, vitamins, and colors? Here is a ratatouille recipe that will satisfy you! A simple and quick recipe to make, in 20 minutes, that will treat all your family. It consists of vegetables: eggplant, zucchini, peppers, tomatoes, as well as onions, garlic, olive oil and flavored with a bouquet garni. Place in the preparation of ratatouille Cookeo.



-3 zucchini
-2 eggplants
-5 tomatoes
-1 red pepper
-1 onion
-1 clove of garlic
-150 ml of water
-1 bouquet garni
-1 C. tablespoon of olive oil


Wash and cut (without peeling) zucchini, eggplant, pepper, and diced tomatoes. Peel and chop the onion and garlic.

In the bowl of your Cookeo, put the oil, chopped onion and start the brown mode for 2 minutes. Add the zucchini, eggplant, tomatoes, pepper, garlic and extend the golden mode for 2 minutes.

Then add the water, the bouquet garni, the salt, and the pepper then program 10 minutes under pressure cooking.

  • TIPS

You can turn your ratatouille into a complete dish. At the end of cooking, add paprika and break 4 eggs directly into your ratatouille. Leave 5 minutes keeping it warm and you’re done! You can also replace the bouquet with herbs of Provence or basil.
