PREPARATION GUIDE: SOUP CHOUMICHA
-600 g of lamb
-1 kg of ripe tomatoes
-4 tablespoons turmeric powder
-2 tablespoons cinnamon powder
-4 tablespoons fresh coriander
-2 tablespoons fresh parsley
-100 g of red lentils
-200 g chickpeas
-4 big onions
-1 teaspoon of tomato paste
To prepare a choumicha soup , start by scalding the tomatoes for 30 seconds and then cooling them with cold water. Remove the skin and cut into small pieces.
Pour a little olive oil into your pot, and brown the onions you have chopped beforehand.
Cut the lamb in pieces and let it come back for a few minutes. Add turmeric, cinnamon, cilantro, tomato paste and parsley for 5 minutes over medium heat, stirring and making sure your choumicha soup preparation does not catch on. Add the tomatoes and cook another 10 minutes.
Go under water your lenses, pour them into the pot. Drain your chickpeas that you soaked the day before, add them, then cover with boiling water (if chickpeas are in box, you add them at the end of soup choumicha recipe).
Add salt and pepper.
Bring the choumicha soup to a boil, lower the heat and simmer for 2 hours.
Add vermicelli or bird tongues and cook for 5 minutes.
Your choumicha soup is ready! Serve with fresh coriander and lemon wedges.
