Cheese and chive sauce

The cheese and chive sauce is simple and quick to make and will accompany many dishes. If you pay attention to your line, it will replace the famous mayonnaise very well, and you can even lighten it a little more by choosing a cheese fat reduced fat. For a refreshing aperitif, this little sauce with chives is perfect to accompany toasts, breadsticks, carrot sticks, cucumber or raw cauliflower, … The simplest things are the best. -200 g of cottage cheese
-4 c. chives
-4 tablespoons parsley
-1 C. lemon juice
-salt pepper


Mix the whipped cottage cheese in a large bowl. Stir in lemon juice (preferably freshly squeezed) and herbs (also fresh if possible, and finely chopped).

Season with salt and pepper and leave to rest in the fridge. Serve chilled.

For a thicker and creamier herbal sauce, cook it the day before using it. This is ideal if you want to use it on toasts for example or in dips for a cocktail party.

This condiment with cottage cheese and chives can very well accompany a salad of raw vegetables (cucumber, tomato, corn …), bind mixed vegetables (canned or home-made) or perfectly accompany a slice of smoked salmon ( or smoked trout, less expensive!).
