The cheese and chive sauce is simple and quick to make and will accompany many dishes. -200 g of cottage cheese
-4 c. chives
-4 tablespoons parsley
-1 C. lemon juice
Mix the whipped cottage cheese in a large bowl. Stir in lemon juice (preferably freshly squeezed) and herbs (also fresh if possible, and finely chopped).
Season with salt and pepper and leave to rest in the fridge. Serve chilled.
For a thicker and creamier herbal sauce, cook it the day before using it. This is ideal if you want to use it on toasts for example or in dips for a cocktail party.
