Ingredients / for 6 people
- 250 g dark chocolate
- 3 egg yolks
- 6 egg whites
- 40 g caster sugar
- 10 cl of fresh cream
- 1 vanilla pod
Preparation: 20 minutes
baking: 10 minutes
Total time: 30 minutes
1- Break the chocolate into pieces and melt in a bain-marie with the cream.
2- Out of fire, add the seeds of the vanilla bean. Mix and let cool.
3- Stir in the egg yolks while whisking. Let cool completely.
4- Mount the whites in firm snow with a pinch of salt. At mid-point, pour the sugar.
5- Add them gently to the chocolate cream by raising the mixture. The foam should be smooth, light and even.
Put in the refrigerator for 1 hour then spread the foam in 6 cuts using a piping bag if you have one. Put it back at least 1 hour before serving.
